Study Shows How Different Types of Dietary Fat Affect Coronary Heart Disease Risk

Boston - Harvard School of Public Health and Brigham and Women's Hospital researchers report from the Nurses' Health Study that it is the type of dietary fat, not total fat, that affects coronary heart disease risk. Saturated fat (found in meats and dairy foods) and transunsaturated fat (margarine, packaged cookies, crackers and fast foods) increase the risk of coronary heart disease. A relatively higher intake of polyunsaturated fat (corn or soybean oils) and monounsaturated fat (high in olive and canola oil) actually reduces risk.
