Ingredients:

C Pearled barley, uncooked
6 C Water 2 T Basil, dried herb
1/3 C Fresh Parsley, chopped
Red pepper, chopped
1/3 C Purple Onion, thinly sliced
2 T Fresh Lemon juice
1_ T Brown Rice Vinegar
1 t shoyu or soy sauce
1/3 C olive oil
Bunch of Spinach leaves
1/3 C feta cheese, crumbled

Directions:
Boil
pearled barley in water for 15 minutes; drain.
If you are using hulled barley, boil in water
for 1 hour and 15 minutes; drain. Steam barley
for another 10 minutes; let cool for a minute
or two. Add basil, parsley, red pepper and onion;
let sit so flavors can blend.
In
a small bowl, whisk together lemon juice, brown
rice vinegar, shoyu or soy, and the olive oil.
Add
spinach, feta and lemon juice mixture to the barley,
herbs, pepper and onion. Toss. Serve warm or chilled.
