Pharmaceutical
Grade olive oil must be considered to be the best of olive
oils. It has all the elements of nutritional interest, as
it has not been subjected to any refining process. The main
fatty acid in Pharmaceutical Grade olive oil is oleic acid,
a monounsaturated fatty acid (55-83% of the total fatty
acids); there are also polyunsaturated fatty acids (4-20%),
saturated fatty acids (8-14%) and other major components,
particularly antioxidants such as Vitamin E and polyphenols.
The beneficial effects of the olive oil on health are due
both to the high content of monounsaturated fatty acids
and to the content of antioxidant substances.
