
It
is known that olive oil is beneficial for people who suffer
from hyperacidity and from gastric or duodenal ulcers. |

Olive
oil in particular slows down the gastric birth using hormonal
mechanisms, favouring the digestion and abrasion processes.
At
the Institute of Nutrition and Food Technology of the University
of Granada, they are working, together with other aspects
that relate olive oil to health(cerebrovascular system, lipidic
peroxidation, physical activity) on the effects of olive oil
on the exocrine pancreas (secretion of digestive fermentation).
The
results obtained up until now open up a field towards the
use of intestinal formulas rich in olive oil for patients
where a functional rest of the pancreas for any reason (pancreatitis,
digestive surgery, cystic fibrosis, etc.) is indicated (Ballesta
et al. 1990 and 1991b).
The
oleic acid has a collagogic action and this favours the vesicular
emptying, it avoids the stasis of the vesicular and decreases
the possibility of biliary lithiasis.
